I've been wanting to share a few of my favorite snack foods, and since I'm having a bit of a writer's block, it seems appropriate for today's post!
- Skinny Crisps - I like the cinnamon, brownie, and seeded varieties
- Veggie Straws
- Larabar Uber Roasted Nut Roll
- Sweet Potato Chips
- Hummus (this brand is good and Costco carries the organic version!)
- Apples (fuji, honeycrisp, mitsu crispin)
- Cheese (Trader Joe's carries a lot of goat cheese, including cheddar, gouda, and blueberry coated vanilla goat cheese!)
- Keen-Wah Decadence: Chocolate Chia
Sunday:
- prep batter for Monday night
Monday: Spinach Quinoa Socca Cakes, roasted cauliflower
- prep Grain-free Wraps
- prep chicken
Tuesday: chicken quesadillas, salad
- prep beans and butternut squash
Wednesday: rice (sweet potato for me) and Cuban style beans (source) with avocado and tomato
- prep sauce and assemble enchiladas
Thursday: Butternut Squash and Pinto Bean Enchiladas (source)
Friday: hot dogs and baked beans, salad
Saturday: I'm having a party and I haven't planned food yet, but I know these will be on the menu!
